Working on the book Fattiga Riddare (Poor Knights of Windsor) became the starting shot for an active approach to food waste. Together with my son Zeke Lind, who is a chef, I wrote recipes and collated facts on how to simply waste less food. The book contains tips on ingredients and storage, making it more fun to use your fridge and freezer, combined with many good recipes to make use of leftover food – everything from bread au gratin and minestrone, to Indian lentil soup and smoothies. As well as simple and clear facts on storage and shelf-life of foods. Long live food!
